This game needs GridKeys
Starcraft 2 has a keybind setup that lets you bind keys to the spaces on the build grid rather than to individual actions, it drastically reduces the number of hotkey fiddling required to play the game casually at higher speeds. CnC Remastered's keybinds are kind of a nightmare, there is no reason every single individual building and unit needs it's own hotkey when you have them in separate structure tabs and all arranged on a grid. You could probably boil down this game's controls a lot better with GridKeys, instead of needing 30 buttons just for production you only need a maximum of maybe 12 depending on which grid has the most items on it.

The game is very faithful to the original, while Starcraft 2 has years and years of previous RTS to draw from. Don't expect the same advanced functions in this Remaster

I don't necessarily but the game was remastered by petroglyph, quality of life is always nice.

Gridkeys should be optional in this remaster so it can become a E.sport. The current mechanics limit your game play because you're clicking everything.

This has nothing to do with being faithful to the originals or SC2 having years and years of RTS to draw from... SC2 is from 2010, this is a Remaster coming out in 2020 - to which they added building hotkeys, which were non-existent in the originals. Therefore, your argument is not applicable here.

At any rate, I tried setting up a grid system on my own, but sadly the buildings/infrantry/vehicles icons move around depending on what you build first, so any grid system is currently unreliable (or will have you either commit to one kind of build order forever OR simply know the different hotkeys for the same building depending on your build order, which is just super lame).

Isn't it faster to click build things? I have my controls set to WASD for camera movement, Z,X,C for building, E scatter, F Guard

What else would you need?

hotkeys have always been faster than mouse movement

Depends on the person, maybe for a casual gamer but anyone with medium/high mechanical skill can use a mouse way faster.
