Is there a way to pick up an entire stack of potions/items?

It really hurts my joints to click so many times to mass move bulk potions/items individually (like placing potions on a shelf, and that also kills my framerates sometimes but that's another topic). Like I would love to just pick up a stack of potions and chuck them at once rather than do it one at a time.

You can't place multiples at once if you're placing them for decorative purposes. You can, however, send entire stacks to a merchant sale offer with shift+click.
