I get: Erase recipe (top left), Get to that recipe's endpoint on the map (bottom left), brew 5 (top right), and brew 1 (bottom right). No options for crafting the max, even.
You can click on "brew 5" to brew five.
You can click on "brew 1" to brew one.
You can shift-click on "brew 1" to activate the "do you want to use ALL your ingredients to brew everything you can?" option
This "brew it all?" option was present in earlier versions too, but I guess not many people are aware of the modified-by-shift-or-ctrl functions here, or when trading.
Maybe if you are seeing this all the time, your keyboard is sending Shift ? Or your control config is setup in a peculiar way?
You certainly are able to brew just one at a time directly from the recipe book.
EDIT: screenshot of shift-clicking behaviour

oh yes how stupid of me. when I received a message on steam I would press shift+tab to return to the game. it really was because of the shift key. I m truly grateful to you
no as I mentioned above it was because of the shift key. thank you for your response
