My original alchemist would very much like to chat with the herbs lady a little more, maybe grow crystal as a gift. My current alchemist always has a great day when the furniture lady visits, he could cultivate a flower for her, and have a few more dialogue options.
Done in the right way, with a light touch, some kind of relationship possibility with the merchants would be a great addition, IMO.
That said, development on this game is fairly slow and there are a good number of things I'd rather have than this, so... gotta get those priorities in order.
Not stupid, but maybe a little silly. Potion Craft isn't an RPG with romance features. It's a strategy game based on trying to do the best you can, making potions, and selling them to the public. You know that, I know that, and since that's the case, maybe you should consider buying BG3. It's a fine game, and if you want romance options, it offers those in spades. Enjoy.
