Slow Down Time?
Is there a way to slow down how fast the day goes? It may just be a personal preference, but I find myself stressed out because the day goes by too quickly. I barely have enough time to plant my crops then talk to everyone, let alone do a quest.

Just remember that you don't have to sleep, you can go straight through with food and elixirs. Plan out your farming.
Once you get the semi automation going you will be fine by about 10am. With time to go hit a triple lesson and do some chatting after 4pm.

I try to do NPC quest by latest 8pm. Sect members by 10pm.

Final planting for that day will be done after this.

I can hit the hay at 5am to get replenish or I just go through with some food.

Aside from the automation conveniences mentioned above, are you making good use of your magic and using the spells to water and plant faster? Are you expanding too much, if you are? I won't build and plant too much until you get the Qiongzhen Pavillion, especially since its unique reward tool lets you harvest very quickly.

Also later on you can just turn a big part of your field into a honey farm. Once flowers bloom you don't have to water them anymore. Then you can set up the beehives and just keep harvesting honey without further work or money required. Makes pretty decent cash too.

You'll feel as if you never have enough time when you start out. Like others have said, however, once you get some quality of life improvements in the form of automation for your fields, you'll have too much time.

That's the nature of these games. It happens a lot faster compared to other ones. By early summer, you'll have too much time on your hands, and be comfortable with your routine. Don't worry about it and there's no time limit or anything.

No matter how you cut it the time still moves too fast. There are literally tons of stuff you should do and you need to constantly push everything back to yet another day and let everything pile up like a damn snowball with constant resource shortages because you don`t have time to harvest stuff, talk to people, do quests etc. etc. etc.
This game should certainly have time slider like quite a few farming games do these days.
Or they could even make the day twice as long by default without making much dent in progress anyway, considering the insane amount of grind in this game.

It will felt like that at start of the game. Once you've gotten used to all character routines, you'll have more time. Try to befriend with Wei Hong as he will give you quest for "water sprinkler" if you reach Heart level 2. You give any kind of "Frogs" or buy "Dry Braised Frog" from Matron Ye for +9 Likings for him.
