Most of the game isn't that scary really, RE7 ( the one with the baker mansion) was a lot more immersive and scary because of the first person mechanics and jump scares combined with the family hunting you in a confined space.
Baby monster is the scariest but other then that it's very mild, it's a lot like RE4 really, both combat, monster and mechanic wise.
I would say RE8 has its moments, but for the most part, you should be fine.
You already mentioned the dollhouse, I guess that could be the worst part for you.
If you can manage that, the rest should be good for you.
It's no Outlast, it has its creepy or scary moments, but they aren't all the time, more like dispersed. For the most part, I would say it's a fun survival experience. But like I said, everyone is different and is triggered by different things.

You can download the trainer to give yourself infinite ammo for free.
Or... just play some other game. Weird choice to pick a RE game of all things when you don't like anything scary nor ammo management.
