Yes, but nothing changes except being able to carry gear and upgrades over. It makes most of the game entirely too easy.

super easy, you just save your data after you beat the game as prompted, then load your save at the main screen and you start a new game

Load the save data file labeled "clear data" or some such thing.

And you can start in on any unlocked difficuly, it's not tied to the save game.
You can complete an easy one and start from there an Village of shadows ng+ with the unlocked weapons.

Yup, you can complete games as many times as you want. I for one, have beaten the main game about 15 times already. You carry over the Duke's food upgrades, money, your inventory, etc. The only thing that doesn't carry over is key items
