I finally figured out how to solve the ultra wide screen option and it's easy!!!
This is how I did it...

Navigate to the game install folder. Mine is on my E:\ drive. if yours is in the default location it will be in your Steam directory .

In the game install directory open the config.ini file with note pad.

This is the part that stumped my at first, it shows dozens of resolutions each one is numbered, starting with one and going up.

I expected to be able to edit the resolution not see dozens of them.

Finally I scrolled down until I found FullScreenDisplayMode=50
I realized that the list of display resolution was just information telling you which resolution was which, not settings that can be edited.

On the entry I changed the FullScreenDisplayMode=50 number to 61, that corresponds to 1440 by 3440 and saved the file and closed it.

When I opened the game it was full screen 1440 by 3440, and I can finally start really playing the game, it's so much easier to look around when you have a wider view.

What I wonder if it's this easy why doesn't the company fix this or at least tell people how to do it.

Anyway I'm happy at last!

Also, just to note. When editing the config file it may bug out and default back once you adjust something again in the in game settings.

Thanks I'll watch out for it, I think that I'm where I'm going to leave it now.

I'm used to editing the config files for many games to get to 1440 but I looked at the video earlier and didn't get that all you had to do is plug in the correct number,

I was still looking for a way to type in the resolution manually.

This is really easy to do, for all the people complaining about having black bars.

I really feels great to finally after two days to have everything working correctly.
I just wonder why the company can't make is so that all the popular resolutions show up in settings like every other game does.

Just FYI if you want a wider FOV you can also use Fluffy's mod manager to change the FOV. I reckon that the base FOV isn't that much better at 21:9. You definitely want to set the base FOV to like 90+ even with your aspect ratio. The only downside with a higher FOV is that once you hit like.. 100+ (at 16:9) you'll begin to see the debug texture for the flashlight. Luckily the flashlight isn't used very much.
