Haven't played Village myself yet, but if it follows RE5s ways then just keep running around until it's over.
Run between buildings and block the doors with the shelves to give you time to survive long enough.
When they break the door, run into the next room (that has ammo and an herb I believe), then go down the ladder where there's a tunnel out. Lure a couple guys to the flour and hit that, it will disorient them and allow you to run outside. Then sprint around looking for more flour or the explosive barrel. You cannot kill the big guy on your first play through. But around that point they should be called off.
The rest of the game is not like that no, but there are times where mechanics make you play a little different. Like invincible enemies until you find their weakness, then they can be killed. So its kind of cat and mouse'ish. Or times you just have to keep running and avoiding enemies until you get to a safe area.
