Does the sun hurt Dimitrescu?
I was told she's basically a vampire, needing to drink blood and stuff to survive and she's "immortal." And her wiki page calls her "Countess."

But my question is, does the sun hurt her? Or does the game never establish that?

There is a non-spoiler answer, as we know Dimitrescu walks the halls of her castle. There is a point where she can be caught walking through her courtyard, which is outside. Sure, it's cloudy, but since it's also mid-morning at that point, the sun is definitely out and shining. Her bedroom also has excellent lighting with 3 huge windows.

She's not a proper "vampire" in the Nosferatu sense of the term, you'll discover why near the end of the game.

Reading lore about characters, if i remember, as it ONLY in the files, it not even sunlight being the issue, but cold wind/weather, if you read the files in the castle you'll find out more!

Yes, if you read the files you will know more, but the part about the cold/weather is only regarding her daugthers (which are made from human women and not otherwise specified "bloodflies").
Lady Dimitrescu has no weakness regarding the weather or the sun - she has just a blood disorder, which mutated when she got the "parasite" implanted.

That's only for the daughters, not for Alcina. They're not made the same.

I didn't really see her as a "Nosferatu" type vampire anyway, but more of the modern day vampire. You know, the really sexualized type.. And that incarnation of "vampire" does in fact still die from sunlight.

Still, she is no "vampire" whatsoever. She just has a (mutated) blood disorder and therefore needs blood/meat to keep her health up.

"This experiment mutated Alcina's body considerably, granting her regenerative capabilities, retractable claw-like nails, and the ability to transform into a dragon-like monster and back again.
