You can hide from them in tall grass so long as you don't have cargo piled too high on your back, hideable shows up green when you scan.
Use cover wisely because they can see you from miles away. If you got detected, all you can do is fire away your Bola gun and kick around to make sure they are all sleeping.
if you want stealth, the bola gun and rope is your best bet. Once you gain the tool to negate the pings it will become easier but later at greater risk because of spoilers.
My main issue is that I can stealth pretty close to the camp and then at random I'll get a ping on my direct location (small circle around me) and then all hell breaks loose. Every time it's happened and I've not been able to see what's causing me to get noticed - any ideas?
No need for stealth
As for why they scan for you, as mentioned they may do it if they saw you and lost track of you, but also the "spikes" marking their territory detect you when you're too close to them and send an alert to the MULEs. A few seconds later, they MULEs will scan for you.
2. Unlocked bola gun? Shoot them, get closer then knock'em with V to KO them.
3. Unlocked nonleathal assault rifle? Recycle bola gun and use AR. No need for using V.
I find that the ammo reserve is kinda low on the assault rifle. I run out of ammo fairly quick, so I tend to use the bola anyway.
The ammo puch that you can put on your back, how much extra does it give? I don't know if its worth reducing my number of grenades for some extra ammo.
And i play the game on very hard.
Ammo puch doubles the ammo, but as it's a situational item I don't like the hassle and an automatic rest (that passes the time and quickens the buildings decay) if I go switching it. You need a blood pouch, grenade pouches and a reserve battery on your back almost all of the time.
EDIT:
Note that I'm playing the game with K+M so I'm biased towards the ammo waste, I rarely miss and headshots are not complicated to perform.
