But I am surprised it doesn't support that resolution in full screen.

Never had this problem with any other game.
@Miss Ameba Try setting it to 21:9 atleast that way I could change it to a higher resolution. Although now the screen is smaller because of the black bars.
You pretty much have to wait for a actual patch to fix it. I also have a 1600x900 screen, waiting for the new GPUs serie to buy a 1440 or 4K monitor. To counter this, i'm using a little program to get my screen to go 1080p (which isn't supported by my screen so Windows is blurry), but in game it's better than having to play at 720p. Not the sharpest but still better.
You'll have to create a .bat file with a script to get it to work. Also, it needs DSR enabled in your Nvidia settings.
Basically, it's a script that makes your resolution to change only when you launch the app specified in your bat file (so for this, ds.exe for Death Stranding).
It will switch your actual resolution for the one you want (1080p for example), then when you quit the game, the script switches to your original resolutio and it closes itself.
