There are more normal hybrid classes like Eldritch Scoundrel for Rogue/Mage, or a Bloodrager for Barbarian/Mage too.
So yeah, lots of options.
Fortunately, there's a lot of transmutation spells that are polymorph effects (not all of them, but look up many of the ones that have "Aspect" or "Body" in the name), so it's not hard to keep one of those on you all the time as a buff. If I was considering taking Master Shapeshifter as a kitsune to just stay in human form all the time, though, I'd almost rather just use Toy Box to give myself a +4 to physical stats and call it good.
Well, this is a game with a bit of stat bloat, so I am not too bothered if it isn't something you would see at a table. Some of the builds that people advocate would require some top tier writing/roleplay to justify why you have dipped into four different classes.
Since this game is more around building stronger classes than it is about true RP, I think it is acceptable. If I were the DM, I would not allow a mythic feat to work like that at the table (assuming it existed in P&P of course).
A lightly armored dex based or heavy armored str based pali would work pretty well for aeon and / or gold dragon. You could also go bloodrager if you decide to go dragon instead of aeon.
