Azata vs Lich as Sorcerer, Which better to choose and why ?
Debating between those two paths...

No, several of the Mythic paths get the option to summon unique creatures into the game that aren't available through normal Conjuration.

Lich can summon various undead themed creatures, such as Plague Mastadons and even a Void Dragon.

Trickster can summon a Murder Pony, Beer Elementals, and a very agitated Wizard, who proceeds to attack everything in sight (including your own party) in a fit of anger.

Aeon can summon Golems into battle, with higher ranks offering more powerful types.

Demon can summon various types of Demons, such as Babau's and Vrocks.

If there are other summons for the different Paths, I do not currently remember / know about them.

There is a succubus companion who wants to redeem herself that joins when Azata options are taken.

No. You also need to actually romance her. This helps her on her path to redemption. Sleeping with unredeemed succubus = death.
On a side note the succubus companion is always female. I make note of this because succubi can take on whatever form their victims find most appealing. She is romanceable by either sex.

Yes, you can return her to her true state of being a soul sucking demon. You just have to be a bad influence on her, and she'll eventually screw up and go back to her evil ways.

The only reason she decided to repent, is because a literal goddess (Desna) messed with her head, and made her experience things she was never supposed to experience. Things like guilt and empathy.

Arushelae is a DEMON, meaning she is composed out of the very essence of Chaos and Evil. Changing her alignment from Chaotic Evil would cause her to cease to exist as a Demon.

Seeing as how she is clearly still a succubus, and drains the souls of anybody she gets intimate with, we can determine that she must still be Chaotic Evil. She just needs the commander's help to show her the truth.

In all the fantasy lore I have read succubi are always female while inccubi are always male. Is it different in pathfinder/DnD, can succubi be both male and female?

In pathfinder succubi are female and incubi are male yes. They are however completely different demon species. They can just change their shape to be one that's more pleasing to their meal. This includes changing sex. A meal is a meal after all. Succubi tend to be more subtle and incubi tend to be more forceful in pursuing their desires. Incubi enjoy hurting their "lovers".So succubi = seduction and incubi = rape probably.

In dnd the whole shapeshifting for meals thing is honestly the same. Incubi/Succubi just tend to prefer a default sex but any succubus can become an incubus and vice versa. They are the same species. They just individually choose to prefer one form over another, and even that is irrelevant since they'll take on whatever form/traits their victims desire. To be honest gender and sex are just a matter of preferece for them. Mortals will generally never be able to tell what any Succubus/Incubus's preferred form is because the succubus/incubus are probably already hunting for a meal..
