With that sentence I hereby say Sorcerer is most fun and easy to start with. You can skill them for bow, light weapons or even normal weapons, and still enjoy all the stuff a spellcaster can. Due to the flexibility you have plenty of synergies with all companions. You might even prefer sorcerer instead of having a wizard in your party.
Alternatively hunter. Because they can become a) super strong and super cool aka sharpshooter / dual wielder wise, b) they can have an extra tank/tripper/mount animal companion c) their teamwork feats make them highly valuable for any party.

Current and second is a master of spell wizard, and i have a lot more fun. Aeon path, fun but not as much as Azata, even if i like the powers.
I intend to try every mythic path (so 10 runs).
I created many NPC in this run, and one of them is a slayer which is a monster. I would have loved to have it as main. It is better at level 15 than my 2H warrior at level 20. Experience in levelling, learning the game (again after PKM which is my only knowledge of the engine) shows itself.
Companions is a personal preference thingy. Gameplaywise I consider them less good than in Kingmaker. They seem ~ more exotic, sure ~ but that does not make them necessarily better. In fact it is even worse for beginners to the genre compared to the easy to understand companions in Kingmaker.
You still can always hire mercenaries. You usually still get to see companion quest whether you take them along or not. With very rare exceptions, that is.

If you were to ask what if I want to leave the companions more or less as they are given to me then the big obvious gaps are a Bard and a big 2H melee damage dealer that hits like truck (at least until L7/8 and even then you don't get the "big" part). You get two tanks, two priests, a rogue, an archer and two arcane casters basically.
Ah ok, kind of played Sorcerer in Kingmaker so was thinking of going something different
Kind of want to go a sort of overzealous lawful neutral type dark paladin or something kind like the medieval Judge Dredd, the kind of person who just punches demons and establishes order with brutal efficiency
