Side Missions Suck
The games been pretty cool so far, but I've reached a set of side missions with the most ridiculous requirements. How do I skip the bullcrab and go straight into the next normal mission?

From Chapter 5 onwards you will get a set of side missions between major storyline missions, and completion of those side missions is required to progress.

I'm in Act 3 and have fought 2 bosses so far. I'm asking if and where the skip button is.

There is no way to skip them. You are required to complete side missions to advance the story.
