Night fighting and monsters
This is a new mechanic for me as it wasn't in the DS game.

I am havin a ton of trouble with monsters at night: It says it makes them weak but even with a +17 beast shield and tons of trimmings they routinely hit me for huge damage in the lower sections of the Tower of Fate proper. Worse, since I have a torch equipped (which replaces my weapon) I only deal 1 damage a pop which sucks ass.

Do you HAVE to use your limited abilities in order to get past enemies at night? I only have 8 total and it doesn't seem like it'd be near enough, but they are the only thing that seems to kill anything.

Yes, abilities are the only way to realistically kill monsters at night (although item effects such as knock back still work fine). It’s not as bad as it looks - abilities are almost always a one shot, later abilities have an aoe to kill multiple monsters at once, you get all your abilities back every time you change floors, and monsters don’t track you as well at night so running away or avoiding them is a lot easier.

Better torches also reduce damage a lot.

Ok thank you. I have (1) Electrocution, (3) attacks that fire in a 3 tile spread, (3) of the starter Mine Mine Mine attacks and (1) of the recovery skills.

Time to get back to playing!

Well, your weapon would only do 1 damage as well, so get your torch out. You're supposed to be using abilities on them, so make sure you have a couple peaches on you as well to replenish ability uses if you need to. I find that most of the time I can just explore a floor with the 8 abilities though.
When I play post-game dungeons I try to favor dungeons that exclude night because I really don't like the mechanic but where you can I find it's better to usually try to camp close to the stairs and do everything you can to wait out a night without picking more than the minimum number of fights.

get gen the cat as ally, he attacks night monsters.
you get him by getting an item in the 2nd leffmost house in town (beside the rich mans house). give it to gen south of the hotel.

aside from that just switch floors quickly, this refreshes your abilities. maybe stay at a stair for a while till you run out of abilities.
