A fresh Ubuntu 20.04 KDE install later
Better, but still not a too fresh OS. If you are using mesa this time, you should at least upgrade it from the kishak PPA - that 6900XT deserves it. How-to: https://itsfoss.com/install-mesa-ubuntu/

every time I tried to start. I tried the Proton-QT recommendation upthread, but no luck

You could try upgrading it to Mint 21.0 It has much newer kernel and mesa.
Btw, the game itself is a bit buggy at the moment. Even if you will be able to launch it, you may experience CTD-s. Hope they patch it soon.
