C\Users\<username>\Documents\Rockstar Games\Red Dead Redemption 2\Profiles\<profilename> - srdr files
You'd probably want to turn cloudsaves off as well to 'help' rule them out too.
https://support.rockstargames.com/articles/225410988/GTAV-PC-Cloud-Saves
(or delete the cloudsavedata.dat and it will 'ask again' on restart what to use - local)
Toss in a side of onedrive, non-default locations, etc.
If it 'isn't there' - can also search for things like srdr* or cloudsavedata.dat

RDR2 has never crashed on me before. Not even once, so it's odd it's just started to happen.
I uninstalled and reinstalled the game last night.
A reinstall can't fix such an issue. You still have all the config files on your system within the Documents folder.
Copy all the folder of Red Dead Redemption 2 to another hard drive or you can move to another dump folder lets say ABC in the the same hard drive so it will be quick and fast rather than copying it in another HDD it will take long time.
Okay uninstall RDR2 on steam or delete it whatever in your side,
remember I give tips for you when you install it again make sure to stop while downloading and ofcourse just delete it on steam or in the folder, all you need just the folder of RDR2 in Steam\steamapps\common\Red Dead Redemption 2,
and copy or move your previous RDR2 folder into new empty RDR2, and then Install RDR2 on steam and it will give you something like folder exist or kinda, and it will verify by it self
I am sorry my explanation is a little bit complicated, coz English is not my native language
The player saved game files are within:
