I heard this game has hunting
How is the hunting aspect? Are there realistic ballistics, and animal behaviour? Is it possible to basically treat the game like a hunting simulator, ignore the story and just enjoy hunting?

Definitely possible. All animals have a rating from 1 to 3 stars. 3 stars being pristine. When you kill an animal if you don't shoot it in the head or heart it will lower the star lvl of the pelt given.

I don't know too much about guns and animals but I think it's pretty realistic. Animals can smell and hear you so have to sneak around and put scent lotions on. You can track their footprints to look for them. If you don't kill an animal in one shot sometimes it gets wounded and you have to put it down. You can skin animals and use their pelts for clothes, saddles, or to sell. Pelts can be in poor, good, and perfect condition depending on how clean a kill is.

I guess you could ignore the story line and just hunt but the story is really good so I recommend you play through it. Also some guns and abilities are locked until you reach certain parts of the story.

The only weapons with realistic ballistics would be things like the bow, lasso, dynamite, firebombs. Every firearm is hitscan and has no bullet drop or travel time.

You do have to make sure to use the right type of weapon for the animal you are hunting if you want a perfect pelt/carcass, such as varmint rifle for small game, repeater for medium, bolt action for large. The most annoying ones are needing to use a small game arrow for the tiny critters like squirrels and small birds.

You can go fishing too, and hunting events and challenges, and legendary animals etc, certainly a hunting game, you live off hunting in this game so yes
You cant treat the game like a hunting simulator, since animals simply spawn in your proximity and if you spook them, they run for some time and then despawn. Mechanically the most effective way of hunting is to ride on your horse as fast as possible until the animal you need spawns nearby.
Also in signleplayer mode you have to play around 2 hours to get to the open world. Im not sure if you can unlock all types of weapons(like bow or bolt-action rifle) without interacting with story.

Don't know what's wrong with your game if your animals are despawning, unless that is online, which is garbage mode and should be avoided.

You can hunt with a bow/guns or lasso, If you use a gun you will scare every animal around you away, if you use a bow you can take out groups without travelling far. There is a lot in the story game that you can do with hunting, in terms up equipment upgrades, new clothing, and trinkets, or sell things to a butcher.

The online aspect has a profession all about hunting called "Trader" you hunt animals and a companion turns them into goods that you then deliver for profit.

Hunting is really fun in this game and it's very immersive with skinning animals and camping. However the story can't be ignored as guns unlock through the story and you will need a sniper rifle to hunt.

The first sniper is unlocked during chapter 2 after a certain mission "Pouring fourth Oil". After that mission it can be bought at a gunstore.
The sniper and many other weapons can be obtained early but not as legit.

You don't need a sniper rifle to hunt...
Almost every single animal can be hunted with a bow, which you get very early.

Hunting is so fun in this game, many times I just go out hunting for hours and hours and don't do any missions.
Hunting isn't very in-depth, I wouldn't buy the game just for it. It's 90% just walking around until you find the animal you want and then using Deadeye to cheese it.
