Guarma and its animals

Im tryna get the achivements where i study/skin all animals, does guarma animals count? and if so can i find them all in the mainland / replaying the missions?

The Guarma animals do *not* count towards the achievements. You also don't have to fill the Compendium to reach 100% completion, but the missing spots may still taunt you if you don't catch em all; 4 birds (three types of Macaw, and a Booby) and 4 snakes (three types of Boa) ... but the 4th snake (Fer-de-Lance) will spawn around Stillwater Creek (west of Thieves Landing), so it's in-fact *not* unique to Guarma.

Edit / minor spoilers; there's also the sea turtle (unique to Guarma, not counted by achievements, and no compendium entry but you sketch it in your journal), and the parakeet (not counted by achievements, but also *not* unique to Guarma - rarely seen in the Bayou).

You can go back to Guarma glitching the map anyway, although after chapter 5 there's an invisible sniper that you must avoid.
