Search for email change notifications and - to click link to recover account.
If you see nothing from R* anywhere, you can also-
Spam forgot password on social club - put in email - check emails for notifications again.
Can also just try 'logging in' to the social club website with what you believe are the 'correct' credentials. The owned games should be listed - and your steam account should be in the linked account tab - else, there's other problems.
Otherwise - Contact R*, jump through hoops, prove ownership, recover account.

If you jump to the unlinking route - your post history shows you as owning gta5 - and you could lose that via an unlink. Recovery of the old social club account will prevent that.
/goodluck - whole process can be silly easy, or really annoying/hard/slow.
I hate that "hassle" is the new normal for everything. I'm at a point where i'm done giving companies money if I have to create an account to play a game or if their single player stuff is online only.
No reason anyone should have dozens of passwords just to play dozens of different games.
Steam acc + originalsocialclubacc === sign in with old email/pass.
If the originalsocialclubacc EMAIL is changed for some reason-
Steam still attempts to sign into that originalsocialclubacc.
And if you use the old credentials - they are now wrong.
Since the old email is no longer in use on the original social club acc - a NEW social club acc is/can be made. Something that's been plaguing many since last June. This new acc makes it look like the credentials are working unless you dig into the acc details.
If you ARE seeing your steam acc linked on the social club website / linked acc tab...
There have been some oddities with EGS/Steam launcher and multi game copies causing issues - usually resolved by renaming my docs / rockstar games to -old and signing back into each properly. R* launcher updates resolve some issues, and bring others. Coin flip every update.
The whole thing is frustrating. Especially when some users resolve it in couple hours, and others take 2-3-5+ tickets over weeks. Many variables. =\
