As for how to tame it, while on horse, use your lasso and then switch horses to break it in.
Alternatively you can hit the Arabian horse with your own so they both falls and then you climb on it quickly. Either way works and takes only 1 or 2 minutes to complete.
If you have Ultimate Edition, you get a good horse as soon as introduced to the Stables with the Hosea "Let's go hunting" mission. But when you do this mission, I suggest that instead of selling his extra horse he gives you, keep it, level it up. It's big brute of a horse you would more then likely never bother to steal or buy otherwise, so at least keep it to give it a try. You can always sell later if you want. Do not break-in any wild horses before this mission. Otherwise you might lose it.
Missouri Fox-Trotter and Ardennes are where it's at for Story Mode; great horses.
If you lose or miss out on the White Arabian; you can always get it later. There are plenty of others to look at and snag for yourself as well.
Do not try to scoop up too many early on, or within a short amount of time. Find them in the wild and take for a test-drive. However you only have 4 Stable Slots and if you redeem free horse from Ultimate Edition, that's a slot right then, then one for the horse Hosea gives you. If you think you need the money from that sale, you're playing the game all wrong.
Arabian type however are not found in packs like some other horses are. They are found at various locations as a single horse. However if that horse some how does not get saved, or it dies or gets sold off. You can go back to that area of the map again later and find another one. You just can't find multiples of the same Arabian in the wild while you already own one of that same kind.
There are plenty of online in-depth guides for RDR2 with every detail about all of this, such as horse type, its looks, its speed, acceleration stats, etc... please keep in mind the stats when you find a horse are not their full specs; these level up towards their maximum for said horse as you increase the horse bonding level.
Do not waste your time with Horses you might see left around that are already saddled; because at the Stables this is considered a stolen horse and will fetch even less money. The stolen horses you can't feed or brush. All those are good for are calming down, maybe give them a good rub to further calm them down, then search their saddle bags. I've probably found over 100 gold nuggets just from going around throughout my time in Story Mode and checking the saddle bags of a horse I see "parked" I forget what the word/term is for that but you get my point. However also keep in mind, if you are seen in Story Mode by various NPCs grabbing up loose items or searching saddle bags, they will attempt to notify the Police on you for theft. This does not occur in RDO however. All the NPCs do in there are make voiced comments like "Omg did you see that" or "Hmm hmm, now I seen everything" but in RDO they won't fetch the Sheriff on you for theft really of any kind.
When you find a Wild Horse you might wish to keep, the easy way with this before reaching Stables is this... Once you mount and break-in that horse and he/she is fully calmed down (you know when fully calm when you can spam G key, or hold it down and the player can pat or rub the horse) after this part, call over your primary owned horse with H key. Then dismount from this new horse, go over to your primary horse, right click your horse and hold down the correct button to remove your saddle, and then place that saddle on new horse. This will instantly give a level 1 bonding with that new horse. Now if you want to switch the saddle back to other horse, that is fine and I would suggest it, unless you do not care if that horse gets lost. Once this is done, save your game manually via ESC > Story > Save Game > pick slot and save. DO NOT use or save over the Autosave slot, as the game uses this on its own and overwrites that frequently. Do not rely upon the Autosave for any reason. Once game is saved, then you can now run around with 2 horses and even use the 2nd horse as a means of having another so you can store a large pelt or carcass to bring in for sale to Butcher or Trapper, or to bring in to donate to Gang Camp. Then make your way at your own pace to a Stable, if you are running around with 2 horses, enter the Stables mounted on the new horse you wish to add to your stabled slots. The other horse will be waiting outside for whenever you are finished in the stables.
too bad they are little bit smaller than they should be, as i know how Arabian horses look in real life they are not small like in RDR2, one of my father's friends own a stable of Arabian horses for beauty contest.
Unfortunately, since this is a Game, the Horses that are physically smaller in size have a shorter jump stride as well.
My Thoroughbred and Missouri Fox-Trotter are just as agile and fast as Arabian once you reach a level 4 bond with them. Missouri Fox-Trotter also has quite high endurance, to where I can go very long distances without even having to resort to using a Stamina Tonic on it. Ardennes is also very good horse.
One reason people are quick to say how good an Arabian might be, is because it is true, earlier in the game. After a while, bigger horses provide you a benefit that you just won't see earlier in the gameplay. Then all you will see with an Arabian is $ signs as they are worth a good $200-300 when fully bonded. But they are worth the higher amounts later in the game after you unlock the Horse Fence.
Thoroughbred is a dinosaur, very big horse i want to buy it but the stats are bad.
I have Turkoman, mid size so i think the jumping stride will be fine, and the stats are generally great.

The Red Arabian can be found west or south west of the main body of water at the Owanjila dam.

There are also whale bones, tree carvings and a monolith with part of a treasure map to be found if you search the whole area west and south of the
small river that feeds the dam and the main body of water itself.

Yes of course the Shire isn't as fast but it's a BRUTE and it makes you sit higher up, allowing me to better sniper over hill tops and such without fully exposure of me or horse.
