There is a Main Mission Quest with Uncle to tour Valentine. RDR2 Questing is Very Scripted, and most instructions are provided in gang dialogue - if you are in the General Store for this Mission Quest then buy something off the shelf, and then go outside (Unlce's dialogue).
Otherwise, if you are not in a Mission, you are mostly free to roam.
Roaming in Story Mode is not necessary, but it is a way to explore and earn $$$.
Pearson's dialogue in Camp said he needed someone (Arthur) to bring in Meat "everyday", and meat and pelts, along with crafting tonics, can all be sold in town.
"There's fools to rob", Legendary Animals to hunt and kill, and all sorts of horses to try out.
The first few Main Quest Missions in Chapter 2 are very useful since the will unlock Legendary Animals (1st Hosea Mission), and unlock the Stables and the Fence (2nd Hosea Mission).
Oh - and Manual Save often, using different slots

Sometimes you might have your own objectives,
like taming a wild horse that you want that has better stats than the one you bought
at the stable. Or you just want a different horse.
Upgrading your Satchel so you can carry more items.

Getting all the pelts needed for the "Legend of the East Satchel"
(the ultimate satchel), is going to take a lot of hunting in far off places.
Just take it slow.
Since you are in Valentine, your camp is probably at Horseshoe Overlook,
one of my favorite spots.
Great place for hunting deer for Person to feed the Camp.
You probably want to complete some of the Story missions, at least until you
get a fishing pole.
In Red Dead Redemption 2, the player unlocks the fishing rod after taking Jack Marston on a fishing trip in the mission "A Fisher of Men." However, it can be unlocked before this by knocking it out of the hands of a fishing NPC.[1]
