In this Rockstar Folder .. the path being Documents\RockStar Games\Red Dead Redemption 2 somewhere in this folder is a problem a corrupted file or something ..
So what you could do is backup or in other words copy this Red Dead Redemption 2 folder to some other place on your computer let's assume you put it in a folder called Red Dead saves... so the path may be C:\Red Dead Saves\Red Dead Redemption 2 ... you copy this red dead redemption 2 folder into the red dead saves folder you made...
Again, the red dead redemption 2 folder is a folder the game made which is located at Documents\RockStar Games\Red Dead Redemption 2
What you could do at this point is assume the following:
1) The save files are not corrupted files
2) Something about the game is glitched and screwed up and will not load your save files (this basically we already know from the problem your having)
3) Uninstalling and reinstalling the game and copying the backed up saved folder will fix the problem
If you want to take a chance and assume these things then do the following:
Completely uninstall Red Dead Redemption 2 .. do this by gong into steam and uninstalling the game then go to where steam installed the game and make sure you delete any of these folders what I mean is go to SteamLibrary\steamapps\common\ Red dead redemption 2 you may or may not see this folder located in steamlibrary meaning steamlibrary\steamapps\common if the folder is in there delete it
Finally complete the complete deletion of the game by going into documents and deleting the Red Dead Redemption folder which is located at Documents\RockStar Games\Red dead redemption 2 in the event you have no other Rockstar games installed just delete the entire Rockstar games directory .. if you do this and you are also playing GTA it will mess up those games ...
I did a fresh install on a new pc and logged into my online rockstar account and it remembered exactly where I was at ..
ok so at this point you have deleted the game by telling steam to ininstall it and you have manually deleted various folders now reboot your pc ...
In theory you have erased the glitch out of your computer ..
so re install the game hopefully when you copy the backed up saves folder the game will recognize it .. currently according to your posts it is not recognizing it so this may be an option you basically have nothing to loose ???
ok so reinstall the game perhaps even verify the files I would actually play the game to where you can do a save .. unfortunatelly this will take time .. but save the game and then get out of the game and verify it loads this save up that you just did .. this means the save thing is working it also tells the game there are saved files ..
once this is done get out of the game and copy the backed up folder that has the saves you want to use .. Remember this folder is called Red Dead Redemption 2 and is to be copied into the Rockstar Games folder which the fresh install will make.
Here is some more info to confuse you ... in the Games Red Dead Redemption 2 folder that is in the Rockstar Games folder there are two folders named Profiles and Settings these are in the Red Dead Redemption 2 folder perhaps the glitch is actually in here somewhere now in the profiles folder there is a folder with numbers and maybe a letter in this folder there is a list of files I think the .bak file as you mentioned is the save file so you could simply back up this file do a complete re install and copy this .bak file back .. but I am not sure if a saved file has to be in "tune" with other files when the save is done this is why I suggested backing up the entire red dead 2 folder....
Once you get things going .. you may have to start from scratch I would back up the Red Dead folder periodically or the profile folder that has the saves or something so in case this happens again ...
