Rolling release is probably beneficial, because you can update to newer versions, without the need to wait for months. Especially Wayland (GNOME defaults to this) helps for gaming (see https://en.wikipedia.org/wiki/Wayland_(display_server_protocol) ).
If you don't want to try it on another hard drive, I would recommend switching kernels. Which one are you using? Aren't there any log files about the crash?

I am in the same boat as you.
It doesn't work because of social club / rockstar launcher.
I also have GTA 5 and I can't run that either , same problem (even though I played it for more than 800 hours untill now).
It's nothing you can do about it.
You have to wait for either rockstar to update the launcher or proton to update itself.
Either way it happens when you have linux and use proton/wine and games have an external launcher (EA , ubisoft , rockstar etc).
Happened to me with NFS Heat a few days ago.
Couldn't play and now after an update I can play it again.
As a linux user you must buy only steamOS games or games that don't have external launchers.
Because sooner or later , you will have a launcher problem or internet problem and you won't be able to play the games you paid for , for days or weeks.
