You have another choice many don't know about. https://redm.net That's RedM, a launcher with a list of player owned RDR servers. They are nothing like Online because each server is player owned and they add their own Mods and scripts. But best is they find cheaters and hackers pretty much instantly and ban them. Rockstar discovered Redm a little over a year ago and said that's how they wanted Online to be like so they bought RedM. As for what you do on these servers all depends on who is running them. All want you to create a character, the way you want them to look, and you Role Play that character. Hopefully you make up your own story.
You can also try the "mod" (which is just a save file) called "New Game +" that pretty much does all the grind for you but leave the best parts to discover for yourself. It does skip chapter 1 though.
And then there are real mods that change the world etc, but rarely mods can make a boring game fun.
But if you're talking about online... just download a menu to skip the grind and be disappointed to see that there's barely any good content aside from the free mode events, the moonshine storyline and the legendary bounties
If you made it halfway through the story and still aren't enjoying it, then it's probably not for you, but I think you'll be addicted by then.
Definitely don't judge it on the first part with the snow though (chapter 1 sucks).
I have a mod i built its called Bandit Hideouts, it currently adds 133 hideouts,
and 46 ambush points through out the map, i actually just posted my
33rd update for the mod this past monday.
You can earn money when you clear the hideouts if you want, but
the mod is highly customizable, check it out here:

I would recommend that you get to chapter 2 as you can free roam there,
also get the PDO mod aka Ped damage overhaul, and the
Crime and Law Rebalance and Enhancement mod which will fix some dumb
stuff with the law.
Also get the Ped Accuracy Overhaul mod which will allow you to tweak how
accurate the bandits or peds are when they shoot at you, otherwise their all
almost crack shots and its just stupid after a while and you will die, and
you will get pissed and you will quit.
So if you want RDR2 to be a shooter game like what you play, my
Bandit Hideouts mod will do that.

If i want to play an adrenaline pumping shooter game, i'd play something like Battlefield or Marvel Rivals.
If i want to play a very good exploration game, i'd play AC Odyssey.
RDR2 is the jack of all trade where almost all aspects of this game are good but not excellent. Focus on the main and side stories.
So the instinct of people who play games like these, who see people saying they think is boring or whatever, often strike first and insult them for not liking it, because they are used to people complaining that the game they like is ‘too boring’ and must defend their position to show that people do like this game and not everything has to be fast pace.
At least something like this for many people, is my theory.
But based on this kind of questioning, you do not seem to apply thus you do not deserve this defensive hate, I hope it does not offend you deeply or anything. I don’t personally have recommendations on how to enjoy it faster paced, it’s not meant to be enjoyed at a fast pace. Unless someone else has a good recommendation, it is fully understandable that this game isn’t for everyone. But thank you for not proceeding to spam 6+ threads saying that this game is bad and anyone who likes it is stupid, like some people.
