for me small game arrows are the thing, and even if its tricky: get nearer! not that easy at first and you might fail a few times but when you master the sneak approach, you might even get a cougar with a regular arrow to its head for 3* (in that case one has to use cover scent lotion too of course and be very, very careful with a correct aim)
Search Google Images for RDR2 animal list and print off a weapon to animal chart, that's what I did. You can get charts that list the perfect weapon for a particular animal to always get a perfect pelt. You will refer to it a lot until you start to remember.

Small game arrows for snakes, best to argo them, simple standing 10 feet away so they get into a pounce stance or roughly that measurement based on in-game scale so you don't get bitten or scare.
Also can often find coverscent when you search O'Driscoll and other camps. And easy to make at camp-fire by hunting Skunk to get scent glands.
If you do use a 22 rifle definitely put a scope of some sort on it. When aiming with that rifle you can toggle between iron-sights and scope by moving mouse wheel up or down while aiming. To hunt better with 22 though it might be best to wait until you've reached past the part of the game when Dead Eye gets changed from auto tagging to manual tagging. Otherwise it's much too easy to auto tag something more then once, which you don't want to do with animals. If you are using the right weapon and it's in good to excellent condition and using the right ammo type and such all animals should only ever take one shot to kill properly. The more info on an animal tells you which weapon to use.
Both games were originally sold together, I only play online due to the bad ending of the game got spoiled for me by someone (off topic), and refuse to play single-player and yet there's subtle differences between hunting
in either online or single player.
When hunting in single player you can get rare things with the crafting compared to online because of their marketing scheme, so I really did not know how to answer your question when you were not fully clear.
