Documents > Rockstar Games > Red Dead Redemption 2 > Profiles > YourID#
Delete the file cloudsavedata.dat
Now launch RDR2; the Rockstar Launcher will now ask you if you'd like to enable cloud sync.
Just for reference, your Story Mode Single Player Saved Game files are these...
SRDR30000
SRDR30001
...
SRDR30015
With the game fully closed; I would make a new folder elsewhere and move those single player files into that folder just in-case. Then perhaps within that folder with your saved game files, make a new TXT file and within it, include a few details to reference which saved game files those are, etc. As a friendly reminder to you later on should you need to fall back on those files.
With your single player saved game files now missing (as you moved them); R* Launcher should now ask if you'd like to restore save game files from R* Cloud Sync upon next game launch.
