Anyway, the epilogue should have been an ending cutscene instead. It negatively affected an otherwise great flow of the story with meaningless tasks like shoveling horse sh*t and feeding chickens.

Part of the "normal life" she wants is for John to change from being a man of action who saves the day into an innocent bystander who watches the man of action ride off to save the day.
She's had enough of John getting into gunfights and doesn't want him to do it anymore for any reason, no matter how justified. Each and every single time he goes out to take care of business, he runs the risk of being killed and leaving Abigail to raise Jack alone and assuming sole responsibility for the ranch.
She'd rather them live a safe and boring life compared to the exciting but deadly life of a gunslinger. It's the most rational thing in the world. When there's trouble, let someone else handle it. John's paid his dues and it's high time someone else paid theirs.
From a gameplay perspective, it's not very entertaining and most players would rather stop playing than have John just roam the ranch doing chores. It's also very repetitive, which can get annoying, but there's nothing irrational about it. It's actually pretty sane.
