If you use windows cloud storage (whatever it’s called) you will probably need to delete the files related to rdr2 too
If you do not need your old Story Mode saved game files; go to these folder and delete everything inside. However doing say may affect other Rockstar Games too such as GTA 4 and 5 so be mindful of that. The Online portion of RDR2 won't be effected as all your user data for that is fetched from the SocialClub services when you enter Red Dead Online (RDO)

Left hand side...
YourUserName > Documents > delete the whole Rockstar Games folder

delete the whole Rockstar Games folder
Ensure you do not have Rockstar Launcher running at all when doing this.
Now right click Rockstar Launcher > Run As Admin
Enter login info and also tick Remember Me + Auto
I'm not sure where Rockstar installs games when they are through the Rockstar Launcher/Store though. Find that folder; can easily do a Search in Windows Files Explorer for RDR2.exe and that'll take you to the right game install folder. Once there, since you redownloaded the whole game, sort the files by date. All the game files should have the same date as per when you downloaded them to your machine. All those other files with old time-stamps should be your left over mod files; delete them.
