If you wanna play it safe, have a variety of clothing and maybe change your look a bit, wear masks once you're inside, or if no one's around then you can do that, but most likely you wanna put the mask on once you're inside. Also, if you can and have the money, have different horses too for this occasion.

Lawmen, Bounty Hunters, Train Guards, Police, etc. can all effectively see through ANY disguise, and identify Arthur Easily - even if they are still some distance off (basically, if they are on ur mini-map, then they are almost close enough to identify you)
Citizens cannot identify Arthur when he is using his Mask, so, if you commit a crime and there is a witness - either kill the witness or Run. Those are your only real choices.
I have tried staying in place to fight it out, but once the Lawmen show up, apparently a portal to Lawman Central is opened because an endless supply of Lawmen keep coming (and ur Bounty keeps increasing) - fun for a few minutes, but then it gets old.
I was hoping to rob the medical store in valentine but you cannot do it without having the law involved. Doesn't feel worth it if the bounty is higher than the takings.
Is there a way to reduce bounty when the law are on your arse? If the fight is long but i don't kill that many will the bounty stay low?
Step in - bow kill 3 bad guys before they can fire a shot, hogtie one unruly woman of the night (before she gets off a shot) without hurting her, get one Scofield, holster it - run from building like my hair is on fire, shooting no one (else) then running like a scared girl scout out of Dodge.
Mask on. Seemed kinda pointless, but that's how it was.
I don't even have a Scofield in this current run. The upgraded Cattleman and LeMat are more than enough, but if I wanted a Scofield - I'd probably just buy one. Most trips out of the Doc's Office ended up costing more than I could buy one for across the street without all the drama.
Even though i have hundreds of hours in this game, one thing i have never done is rob a train (apart from the story mission ofc). I guess you just gotta be quick and expect a bounty.
Buy ticket from Emerald Ranch to Valentine.
When arrive at Valentine run to Caboose and Steal Peas.
Buy ticket to Emerald Ranch.
Repeat.

When you arrive in Valentine run back to the Caboose and steal the canned peas. That counts as a train robbery.
Leave the train, run to the Office and buy a ticket from Valentine to Emerald Ranch.
When you arrive at Emerald Ranch run back to the Caboose and Steal the Canned Peas.

I gotta tell ya - it seems pretty cut and dried to me.
1) there's a can of peas sitting on a crate in the Caboose.
2) almost nobody cares if you steal it.
3) steal a can of peas and score 1 train robbery - if you can manage to get away clean...lol
