Report a translation problem
It is EASY to build a custom outfit, put it on the horse and not save it. Too Easy. Pay close attention to the icons, text and screen prompts when in the Wardrobe. Make sure the Custom Outfits on the horse, are actually saved Custom Outfits.
You can have 5 Outfits on the Horse (with the upgraded Saddle Bags). Any combination of Crafted/Purchased/Custom - but only 5. If your Custom Outfit doesn't have a Bandanna, when you put on the Bandana out in the world, you've created a new Custom Outfit. Reload the same outfit after the crime and you Delete the Custom Outfit automatically. Then you should load a new outfit - so you won't be recognized, of course.
Another Wardrobe 'Bug':
If you're in the wardrobe and equip an outfit, the outfit you were wearing vanishes from the horse. Be sure to put it back on the horse, but don't worry - when you've done it 50 times, you'll remember.
If you're in Chapter 3 - a bug caused by "The Badge", of all things may vanish your Custom Outfits (it gets some or all of mine every time). Re-create your Custom Outfits and it should be OK after that, but that dumb Badge will appear and disappear until late in Chapter 3, then it goes away on it's own without further incident, wardrobe wise.
It's really annoying, 'cause you make some great outfits that show off and complement The Badge - then the dam thing doesn't show up...lol
Pro Tip:
After hunting, you're soaked in Blood - even though you may not see it. NPCs will see it and comment on your appearance. After Hunting, or fighting, or battling, or being thrown to the ground from your Arabian - load up the outfit again - to get a fresh one. Always look your best.

It turns out it doesn't actually overwrite them, but just basically replaces it on your horse. When you select custom outfit by accident, it basically says "okay, we already have 3/3 outfit slots taken, replace outfit 1 with current outfit, but because you already have that exact same outfit on. It just basically deletes it from the horse loadout. This is pretty annoying because it's too easy to accidentally select this.
But if you have a sequence of events that's working for you - do that.
You may want to upgrade your satchel, and your saddle bags before you turn Public Enemy #1. You'll live longer between death scenes if you can carry more outfits and soothing tinctures.
Clicking on a clothing piece in your inventory to take it on and off, with an immediate readout of warmth, like I do in skyrim.. that is easy, this is torture.
There's a mod wherein you can 'Name' your Custom Outfits and have 200 of them, if you want, but I don't trust it not to break my game. Instead, I learned how to manipulate the available functions so they bend to my will.
But yes I can still play =)
Another way is to just save one outfit to your horse (like a cold one "grizzlie outlaw") and when needed use the camping function to setup a camp and then fast travel back to the main story camp to change outfits. The only bummer that is that you may have to do more long horse rides.
Most of the Trapper Garments are ridiculous, but there are a few items that can be put together in Cold Weather Gear. "The Stalker" isn't bad, and has the benefit of not being too warm when you come off the mountain... not so with this little number:

I usually carry 4 Custom Outfits, then toss in a purchased, or crafted outfit that doesn't suck too bad. I just got "The Tumbleweed" and that's in the bags this week. Not in love with the hat, but it'll do.
In fact, the ONLY Default Cold Weather Coat you have is The Denim Coat in the Winter Gunslinger.
With a Few Trapper Articles, in this test it took the Bear Shotgun Chaps, the Huntsman Vest, and a pair of Legendary Cougar Gloves to get that outfit into Cold Weather:

Out of the box, The Grizzly's Outlaw is good for 'Average Temps' - a range from about 60 down to 30. If it's below 30 - you'll eventually freeze to death. It does 'Look' Warm, but it's not - apparently.
Almost every Trapper Item is Cold Weather Rated 'cause it's made out of an animal skin with the hair on it. PETA be dammed - that stuff is warm... sometimes too warm.
