I do own a laptop, but I don't game on it.
It wasn't powered on at the time of posting.
My desktop has some old bones, but it far exceeds the minimum specs and meets or exceeds recommended specs on everything except the CPU. That old I5 benchmarks well above its weight class too, outperforming a lot of newer, pricier cpus.
I5-3570k O/C'd to 4.5ghz

The game runs well enough on a mix of High/Medium settings at 2560x1080, without dipping below ~45fps during benchmarks. Dropping everything to minimum had no effect on the frequency of crashes. Reverting the overclock had no effect either.
The game ran well enough for me to complete the story, rank up to ~150 online, and clock ~1000 hours before these issues manifested. Around the time the naturalist update came out, I started crashing every ~2 hours or so. More recently, those crashes were happening every 15-30 minutes.
The issue may be resolved, but I'm not sure yet. I replaced my game-ready Nvidia drivers with Studio drivers since I've had driver related issues with RDR2 in the past, and I've been having much better luck today.
I've just been playing since I got off work ~5 hours ago, and only just crashed after tabbing out.
In my 1100 hours I've seen a great many hackers.
I've had cages spawned on me in the Saint Denis tailor. (No collision, but stepping outside the cage caused me to explode.)
I've been attacked by hordes of twin headed skeletons.
I've been sniped by flying players using character models from single player.
I've been chased by players riding 3 story tall horses.
(including the one painted like a zebra from singleplayer)
I've been randomly ignited/blown up, thrown airborne and stuck in a loop of deaths so swift that I couldn't open the menu to swap sessions.
(including at least one occasion where I was still in camp with the white flag raised.)
I've been in PvP matches with AFK players who auto-walk forward while dodging every bullet. (Happens every time there is an XP or $$$ bonus.)
After installing the Nvidia Studio drivers and activating dev mode on the nvidia control panel, I am now crashing after ~3-6 hours of play instead of every ~20 minutes.
I already do run in borderless mode, but I've been swapping settings around quite a bit due to these issues. I'm watching youtube on my other monitor as I type this. I've also tried running the game in a regular window and not running a browser (or anything else) on my other monitor.
No effect.
I don't have issues in any other titles, just RDO. I have regularly had issues pop up with this game specifically when I let my drivers get out of date. Now the new drivers are borked as well, so I was forced to resort to the studio drivers instead, which offer partial improvement.

i even cant finish a single mission right now
i have tested 30 different games
no problems at all just rdr2
As for the issue, I have encountered the same case. Played about 7-10 hours with no problem, then starting yesterday the game crashes every 5-7 minutes. So far I've tried:
- deleting sga files
- running on vulkan and dx12 both in fs and bl
GPU ran stable in heaven and other game benchmarks, even with higher clocks than usual. Never have any problem whatsoever playing other graphic intensive games either. Game's running smoothly at 75 fps when it works with Hardware Unboxed settings.
