You can almost always disarm a longarm by shooting the weilder in the upper-arm area. You can SOMETIMES disarm a pistol by shooting at the hand or the metal part of the pistol itself.

the "punch disarm" move i believe triggers when you use a melee attack, while holding no weapon yourself, and the enemy is holding a pistol.

Waitttt I think thats the one I did once? Again, I might be confusing things, but everytime I try to disarm someone Arthur tackles the enemy and there's the option to let him go, punch etc...
The one I remember is just arthur hitting the enemy's arm and dropping their pistol
Did you know you can hail and stop a stage coach and then send the guards off and rob the coach through violence or subterfuge?
Violence = Threaten the stage coach drivers to open the safe while the guards are away.
Subterfuge = Rob the safe without the stage coach drivers knowing and before the guards return.
