Paying for supplies just restocks what's available for you to take from the Med, Weapon, and Food wagons if you're low and don't want to scavenge. Upgrading the wagons just increases the quality of the items you can take.
Buying the chicken coop and bringing Pearson a perfect quality animal carcass daily will provide you with gold cores when you eat from the camp stew.
There's definitely benefits to supplying the camp and purchasing the camp upgrades. But other than that, like the others have said, it's not necessary to do at all. Though, you'll eventually get harped at by Dutch, Susan, and a few others if you don't.
Also, it's subtle, but the mood of the gang does change along with dialogue. The members will argue with each other more and be sort of petty towards one another if you don't upgrade the camp and supply it. There's actually a camp morale system.
It is an unfortunate fact and most players won't realise it but supplying the camp is actually pointless, the same as buying the boat for the camp.
It's a little like scrubbing the decks on a seventeenth century sailing ship, it has no real purpose but keeps the mind occupied.
The only real point of the camp is to upgrade Arthurs satchel.

Camp morale is a nonsense.
As for honour it's the easiest thing to up or down, it really is.
Get your low honour things out of the way early such as robbing people, after that just concentrate on the game the way you want to play it.
You'll reach high honour in no time.
