Not sure if this is happening to you, but sounds more like normal than griefers, especially if they're just attacking with guns and not raining flaming croc's or elephants on you . . .
If I'm on my trade wagon I just wait for them to get close and use my pump action and blast them. One shot.
Unless these enemies are completely unkillable; then you're dealing with cheaters.
Honestly, I'm surprised just how much cheating/hacking there is. I've not played a game this badly infected for over a decade. Raining wood cages that trap you with a bear, moving your camp, spawning predators in front of you, and the cheater is right there - telling you what they're doing!! Invisible stalkers, the list goes on, sadly.
I don't have an amazing understanding of such things, but to the best of my knowledge, because this game uses peer-to-peer connections (rather than dedicated servers) I believe Rockstar has incredibly limited visibility as to what's actually happening within all the game sessions. They don't appear to have a good way of monitoring the rampant cheating that's taking place.
And because Rockstar apparently can't moderate this cheating, it appears to go completely unopposed. :/
Seriously, I've witnessed cheating in other games, but nothing can close close to just how blatant and frequent the cheating is in Red Dead Online and GTA Online for PC. :(
Rockstar and Take-Two REALLY need to address this in their future PC titles. :(
Sadly, I feel RDO on PC is pretty much a lost cause at this point.
If you want to play it you either need use a 3rd-party script to create private sessions, or you need to play the game on console where cheating isn't as big an issue (I rarely saw it on PlayStation).
Or perhaps this is just an Asia/North American West Coast issue, and Rockstar really couldn't care less about those members of it's audience because cheating is so much less of an issue elsewhere? I dunno.
I wish they would address it. :(
I don't play online anymore because I got tired of paying for a subscription to a menu, so even by admitting my usage here I wouldn't care if I got banned from online. It's just a work around that I thought of once I saw what that menu could do specifically, but RDO doesn't have enough unique and engaging content in it to make me want to continue paying to play. If I do ever go back to online that is without a doubt, 100% what I will do again. These cheaters that seek to ruin everyone's night don't ever get dealt with so I have no remorse about installing 3rd party assistance to be able to JUST PLAY the ♥♥♥♥♥♥♥ game.
Are they usually dressed like captian American and fly outta of the sky throwing large ships? or are you in some kinda Hacker denial? almost 2-3 hackers per instance some do their own thing others mass teleport you, kill you, grief everything on server just to screw with people.
When the solution to avoid cheaters is to download your own cheats you know it's time to move on to another game. o_o

Absolutely agree with you lol, that's why I did it for a while and then moved on. Just isn't worth it, but it's certainly a fix if playing online is something somebody feels they need to do.
You start a delivery, nobody's around your camp, just as you spawn with your cart -- a dude spawns behind you, with a semi automatic pistol, and distinct username, kills you, blows up your cart, kills your horse, picks up the bag that fallen off the crate and runs. And when you try to revive your horse -- you blow up in the air. And then he's gone the way he showed up.
If this is an NPC then I'm Joe Biden.

Sadly, what you just described sounds like a typical session of Red Dead Online on PC. The game has a horrible cheating problem.
If you're unhappy with the current state of the game I strongly encourage you to leave a negative Steam review; it sends the loudest message to Rockstar/Take-Two that their game's in an awful state.
It also warns others about the rough shape the game's currently in. :(
You give sound advices my dear friend, but they both feel good and bad at the same time.
"Leaving a bad review" -- right thing to do, they deserved it, but then again, this game could've been the best one I've ever played, and it just feels bad to speak negatively of it, it just feels bad.
And for "cheating to protect myself from cheaters" -- might be the thing I'll eventually do, but that means becoming a cheater myself, and I despise them, with all my heart. You can do Bounty Hunting, Collecting, all kinds of stuff in public lobbies, but Trading role, especially full cart deliveries -- that's so frustrating, when you work hard to stack those materials, invest so much time in it, just to watch as the cheater ♥♥♥♥♥ it all up, and you are powerless to do anything against it -- yeah, might as well cheat your way into private lobby and feel bad about being a cheater, instead of feeling bad for losing all your effort.

Truthfully, I think this game is incredible - especially the single player campaign!
And I honestly think the multiplayer has the potential to be one of the best online worlds on the market. :)
But, and it's a big but, I think the online is being completely ruined by the out-of-control cheating. :(
When I recommend disappointed players to leave a negative review it's not because I loathe this game or want to see it perform badly, it's just the opposite. I'm hoping that if Red Dead (Online specifically) Steam score were ever to drop to "mixed" it might prompt Rockstar/Take-Two to address the problems that are currently harming the game.
lol, that's probably an optimistic and naïve hope, but I'm not sure what else would draw Rockstar/Take-Two's attention towards fixing the issues that are currently ruining this otherwise incredible game. @_@
