Missions like escorting someone on you horse appear randomly and again. Having something else rather to do and ignoring those mission for the time being, has no effect on the rest of missions/the game. You might lose honor though, and for that it's better to take one step at a time in rdr2.
Playing single player rdr2 it's always good to save right before/after important tasks, like killing and skinning the bear with Hosea (note that this mission is 'completed' even on deciding to go after the bear later ingame, you do not have to do that right away)
Also to ride 'carefully' around the landscape might be advisable, for such missions like escort the lady are recognisable from far away - when you keep your ears and eyes open - and you can avoid those or approach later on, if you've got something else to do - always riding at high speed can trigger more events than you might want to. But of course that depends on your personal playstyle.
For this time it would be best to load last save before the hosea-mission and start it again. You might be rewarded with the legendary-bear pelt/items at the trapper or fence anyway, but rdr2 stands bit on shaky grounds with bugged missions or overlapping events, at least that is my experience after quite some years with this amazingly wonderful game.
With somewhat ten saveslots I had always managed to save roundabout my gameplay, but I have to admit, I am a fairly relaxed and immersive-conditioned slow-poke-cowboy who would rather be the Marshal, but there you go ;-)
As for the horse girl... it's a random event... it'll trigger again, eventually. She doesn't give you much either... just a pawn trinket... and some dialog. Don't think the random event chains into anything. All random event retrigger if you ignore them previously. Some are reaccuring. Like the snake bite guy that will end up buying you free guns/clothes if you run into him a second time outside a store.
