If you have an active Horse out, dismount from the Horse, hold down right click option on Horse and press Flee. Wait about 30 secs or so and then walk into Stables on-foot. If you show up to Stables on Hunting/Bounty Wagon, dismount the wagon, press L key > go to Stables > Wagon and select Discard so the wagon is called back to Stables and removed from being active; then walk into Stables on-foot.
While in the Stables if you have multiple Horses, remember to pay attention to which one is "Active". You can change the active horse and then when you exit the Stables, that is the Horse you will be exiting with.
If you are in the open world and wish to switch active horse at any time, press L key > go to Stables and from there you can change which owned horse is set to default for certain scenarios; for your default open-world horse, that would be Free-Roam. The others are options for which you can change default horse for certain mission types; such as Race Series for example. Once you change the default for Free-Roam, the current horse in the open-world will Flee automatically. Once this occurs wait about 15-30 secs, then press H key to call the new/changed default horse to you in the free-roam/open-world.
The only reason to enter Stables is:
> To preview and/or purchase Horses (yes you can do this from the Handheld and Online Catalog Magazine, however being in the Stables allows you to better see the Horse and such.
> To make changes to a current Horse, such as extra purchases or changes to current Saddle. This of course also allows you to better preview/see the various Saddles and other available upgrades. Some upgrades are locked on depending on which Saddle you choose. As some will come as a complete set where such changes can not be made to it.
> Whatever Saddle you apply to a Horse, please remember to buy/apply Upgraded or Collector Saddle Bags. These will allow you to carry more Saved Outfits at any given time while using that Horse, as well as available Hat slots.
> Changing the other looks of the Horse such as Mane/Tail hair preset and color. With some other options such as Mustache and Mask (if you unlocked and purchased Horse Masks when they were available). You also can remove the Lamp as well should you change your mind about using that. The Lamp once paid for (for that Saddle) will remain unlocked so you can apply it again at a later time if you wish. This however is a Lamp that can only be enabled/disabled via the Stables.
