Eat cooked Venison and Big Game Meat. ;)

After watching the vid it seems pointless to eat so much, underweight is not a debuff

Yeah it's fine to be underweight you just take slightly more damage and have a skinnier appearance though i'm not sure how noticeable it is.

Eat and sleep. I found sleep to be very important to gain weight. If you eat when you wake up and before you sleep, something like cooked meat from your hunts then you'll gain weight pretty quick. Also from time to time while you're going somewhere just eat something and also some snack for good measure.

Cap your fps to 30. The game is hard coded to run at 30 fps internally and if you raise your fps above it, then game logic will run faster too. This includes weather, core drain rate and as you have found out, weight. Capping it to 30 fps means you can easily maintain your weight or even gain weight. I usually only eat a single cooked Big Game Meat a day and maintain perfect weight.

Damm, i never knew this. Is this just a pc issue i guess? I bet the game is horrible only on 30 fps right?

Might be complete speculation too. This is the first time I read something like this about RDR2. I have no issues uncapped, everything seems to be running fine but I never go above 50 FPS anyways cause potato

It's literally the most famous bug in the game. How have you never heard of it?

Ooooof. All right, I take that back. I got this game a month or two ago so that's how I haven't heard of it.

I'll also try the 30 cap but damm it's going to look bad haha!

FYI you don't have to cap it at 30. If you're playing on 45fps it should be a good balance. It just means you will still have that thing pass a little bit faster than normal. If 30 fps is norman then 60 fps should be double the normal so I would personally take a 1.5x modifier over not being able to aim properly

If you play with mouse and keyboard then 30 fps is just asking too much. But I play the game with a PS4 controller because frankly that's the way it's meant to be played and it plays perfectly fine. With my aging but solid rig, I get 1440p Ultra settings with a locked 30 fps. With auto aim, shootouts are a breeze and I probably play far more efficiently and accurately at 30 fps with a controller than someone trying to play at 100 fps with keyboard and mouse. I agree that 45 fps is a good balance but if you're a perfectionist like me who wants the authentic experience as it was intended, then 30 fps it is.
