Infamous and iirc some of the legendaries(i think the later released ones require it).
Festive call to arms is on x2 so good way to make gold this month.
As for best role afterwards, i'm gonna level with you Rockstar quite literally gives no ♥♥♥♥♥ about balancing the roles in any way, all the others are a waste of time if you're looking for leveling and money.
Bounty hunter is ridiculously underpaid, you get legendary bounties but i've never gotten more than 100 bucks and half a gold bar from completing them, the best part of this role is the gun tricks you unlock as you level up and nothing else.
Moonshiner and the trader are very similar in my opinion, however it's just dependent on how much time you want to spend, Trading to me takes forever to get anything done, but after the work you usually land upwards of 800 bucks. it's not better than the collector in any way, but it is different. Moonshiner is a simplified version of trading, and i find it to be more fun, It's faster than the trader, and actually has larger profits most of the time and isn't time consuming or annoying. I will warn you, drive slow with your wagon of moonshine or you'll spill and make less money.
The Naturalist role is not worth the gold it cost. Many of the goals conflict with other roles like the Trader for instance, and Harriet will then refuse to deal with you because of this. It's retarded and Rockstar again don't give two ♥♥♥♥♥ about the player base enough to attempt to fix it.
If you're looking for fast cash/gold and some shooting action just do the PvE game mode where you defend a fort or a town or something.
TL;DR: roles in terms of best to worst - Collector, Moonshiner, Trader, Bounty Hunter, Naturalist.
Bounty hunting gives you way more abilities - like eagle vision while spriting on your horse - some of the loot from bounty hunting are pelts for trader role - it may not give lots of cash - but it gives gold and can be done over and over in one area without fast traveling for other bounties - runs really well with trader - and you can hunt while the timer is going down.
Moonshiner role requires way too much babysitting - you miss a sale client you have to wait 1-2 hours for another or sell it at a lower price - revenue agents are extremely hardcore and will throw dynamite at you at the highest level of sale - timer is so low at higher levels that it requires you to break or almost break a bottle just to get to location - time runs out you lose everything.
Trader role easy to maintain - takes a bit longer but you can do bounty hunting to get gold in between - and you don't have to worry about your stuff being blown up - it is timed but its reasonable and gives you plenty.
Moonshiner is just for you to have a place to chill out, etc, the business requires too much time management compared to any of the other roles - and can conflict with it's time management system.
A hybrid role works well for me, running two roles at once, and Trader/Collector together is quite rewarding, while a hunting wagon is a must. While Cripps is mashing animal parts, you find collectables and fill the wagon. Deliveries and supply runs in between, I can grind for hours like that, and do daily challenges in between.
This month I'm combining 'Shine and collector.
