and the detail of the horse and other fauna physical and motion models is astonishing
The horse animations in RDR2 are absolutely stunning, their look, their muscles, their movement, their sounds, and with all the wild horse taming stuff, the stables, the horses having slightly different mood and behaviour I'd say this is one of the best, if not the best horse riding game nowadays.
There is an analysis from a few years back about the horses dressage moves in RDR2 and their equivalent in real life. quite interesting!

'Course, there are discussions that the Arabian horses should not be that small or that some of the breeds (and there are quite a few!) should not be in this setting / time and other stuff, but with all the immersion in the game, the landscape, the weather, you can get a veeery nice feeling of cowboylike trail riding - if you play the game in that way.
there could be more stable slots in single player, though...
But I guess, one can't have everything.
No need to follow the story, well maybe just a bit at the beginning to unlock certain tools and stuff, but other than that, maybe after you reach 'chapter 2', you can find yourself, say, a wild Mustang in Grullo Dun, tame it (if you are careful, you don't even have to ruffianly lasso it first! that might not be so very much real life, but it is fun) bond with it and just ride along.
don't forget to groom it and feed it of course ;-)
Also, if Arthur has the money, you can buy some nice horses at stables, but some of the real beauties are only available later on, when you proceed with the story (unless you use mods, of course)
Ah, by the way: you can sell wild horses at stables to make money, if you avoid being a gangster cowboy, like I do, no pun intended ;-) the more you tamed it and bonded with your horse, the more money you get. there are a few very rare breeds that can give you quite some earning, like some fully tamed arabian, but where to find those you might want to find out by yourself ;-)
choose a saddle to your liking, a nice blanket, maybe safety stirrups, special food, whatever, and enjoy the wilderness with your companion. that's what I do most of the time, after my playthrough. Sometimes I visit camp, that the poor souls won't starve, and now with some easy going mods for single player I can explore the whole map with the main character Arthur, for I just adore how he talks to the horses and would miss that in multiplayer.. but mp, well - that's another story...
I for myself just very much enjoy the ride in single player and if you like horses and the cowboy-genre, you should not miss this one, for I did never ever regret to have bought even the ultimate edition where you can ride a very special Thoroughbred ;-))

I agree. NO game does Horse movement better than RDR2. NONE!!!

maxed horse bonding in real life is a very powerful experience.
