There is no need to progress too soon (if ever!) and you can pick sidemissions or avoid them as you like.
maybe you rather hunt and enjoy the view or go after enemies, tame horses, explore. only in proceeding with the main story one has to follow certain tracks but you absolutely can take your time there and follow your pace, as you do that already !!
just a few missions are time-sensitive, but you will know that, when you get there. but if there is a mission for the main story and you see the blip on the map, there is no need to do that right now, even if gang members repeatedly ask you about it - there is no "story failed, 'cause you forgot it".
this is in most parts (imho a quite enjoyable) open world game. only if you collect certain things - clothing, weaponry, horses - you might have to proceed with the story, for some parts are only unlocked later on, but those things certainly are everything but necessary for a redempting live in the old west ;-))
Time loses all meaning when exploring the world in this game.

I plan to get some new horse, and rob Valentine bank, maybe fishing and explore the world
I plan on staying in chapter 3 for a while and have spent
most of my time exploring and hunting Legendary Animals so I can have
Trinkets and Talismans crafted.
Also been fishing for Legendary fish.
You can also hunt the required 3 star pelts for Pearson for
camp cosmetic upgrades, upgrading your satchel,
and of course the Legend of the East Satchel.
These activities will keep you busy for quite a while.
Free roaming only now starts to get a bit boring sometimes, but still things to do, to enjoy, and to discover.
I really love how the landscape, the weather, the plants and the wildlife is portayed.
Yeah, some disappointments and annoyances, but this game is FANTASTIC.
Well, i actually think you should move futher with story, you gonna be able to unlock new things, etc
