Second to the last Deadeye level allows you to point and paint (Q key I think, but yours might be different). Last Deadeye level allows you to paint and shoot and continue in deadeye.
I can be mixing my explanation up so take it with a grain of salt. I know I can do it.
Funny Story the 9th Sharpshooter challange took me most of the game to complete. Shoot off 3 hats in the same deadeye session. You would not believe how many enemies flinched causing a headshot or didn't wear their hats that day or moved behind a column. Drove me crazy.
It might be tied to honor, it might be tied to whether or not the person is a civilian turned hostile, or enemy, you might only be able to do it in deadeye, i couldnt tell exactly what the requirements are. It could be chance based for all i know. All i know is its very possible and i almost always get a kick out of doing it when it works.
I think you can only use a revolver and you can only disarm a revolver, so don't bother using a shotgun or trying to disarming one, it wont work.
hats are much more easier to do, and chances are you will get more hat shots unintentionally than intentionally. Just aim for the rim and you'll get a hat shot, you can tag the rim in deadeye i think.
there is a random encounter (two actually, not the one in the saloon) in valentine where a guy challenges you to a duel, if you accept the challenge you can disarm him and get honor, and if you have a offhand holster, you can get a free spare cattlemen. which is not bad.
You have to shoot the hand or the revolver to disarm, not the arm.
I did some testing yesterday to see if i could verify what other people said and it came down to this:
I can disarm any opponent who is not on a horse by shooing them in the upper arm- deadeye seems to not have an effect.
Any shots below or above the upper arm for some reason do nothing. it seems like the only effective way to disarm an opponent is to shoot them in the upper arm while theyre standing with a rifle; i havent been able to disarm even a single revolver yet.
People who have their rifles disarmed usually pull their revolver out in less than a second afterward so it's not very useful anyway it seems.
I mostly only want to disarm for roleplay purposes and walking around hogtying a bunch of strangers and leaving them in the desert starts to feel psychopath-ey after a while.
