That's fine but you are going to have some progress lost (albeit not much) if you don't kill and skin rabbits.
Also, the likelihood, you'll gallop over a rabbit on your horse at some point in the game is pretty high.
oh right - the first quest with Hosea literally requires you to kill and skin rabbits.
and, once you eat them, u can rub them in ur tummy all night long :)
