The quality of those 3rd party services may deteriorate sooner or later. Also, say goodbye to a big portion of free custom content (e.g. irl stuff imported in-game). The publisher, Take-Two, never endorsed modding when it comes to anything Rockstar related. Instead, say hello again to heavy monetization... Gold Bars and Shark Cards will most likely make their way into RedM and FiveM. Edit: fixed a typo here.
Even worse, they could start charging for mods. People would essentially give their money to Rockstar for work they didn't actually do. "Curated" multiplayer mods?! come on.
This is now an official multiplayer extension. Keep that in mind. Expect limited modding, paid mods (again, multiplayer-only), new restrictions... and possibly no cheaters at all (since RedM / FiveM use their own dedicated servers) - the only good thing. Everything else is about to get worse.
The server I'm in has legendary animals and animals to hunt yes. Some servers have NPC's and some don't, like I said it all depends on which server you play on!
Of course I knew that, the news was everywhere for 2 days as the first win Rockstar has made in a long time.
You clearly don't realise multiplayer server mods already cost money. The server admins pay for them to use on their servers, so that's already been the case before Rockstar bought them.
What in your head makes you think this would mean more limited modding? The main reason they did the acquisition in the first place was to give them even more access to game editing tools and more resources. You seem to have a very backwards perception on what it actually means.

The other issue most RedM servers owners have is they all believe that because this game's setting is back when Dime Novels, TV, movies and this game is about lawless murdering gunslingers then EVERYONE must be a murdering gunslinger. They seem to forget that for a society (server) to grow you need people slinging a broom or a hoe and not killing and robbing everyone. It's simple logic you would think, "When most people get robbed and killed all the time, cos that's all the server offers, many leave. New people then face those that remain and those that stay enjoy being evil and new players leave quicker each time."
I still recommend trying RedM but remember what I said. Perhaps you'll enjoy the idea of RedM and what it can offer and you make a non pvp server where the law actually RPs stopping the robbing a killing and then a society thrives. Don't allow any player to just join and instantly start robbing a killing. Make a server where you have to learn to be a gunslinger and outlaw, just like players have to learn to RP a lawman, a Blacksmith, a Horse trainer and so on... And don't ban me!
