The think the main-draw with the ultimate edition is it comes with 2 bonus side missions in the single player campaign, and a bunch of bonuses in the online mode (quicker leveling at lower levels, a few free weapons, an exclusive vest, and a really good starter-horse).
When I played the single player campaign on console I didn’t do the bonus missions, and I didn’t feel like I was missing out.
its really more than worth it if bought on a discount,
just remember you cannot upgrade later (cant buy it separately) so choose carefully.

It's like a fiver extra mate, just fire and forget.
In future you may bump into pleasant surprises that you didn't know you had like horses or weapons.
