Report a translation problem
You don’t need to kill the bear right after the mission but if you lost the pelt then you lost just a few dollars you could earn by selling it to the trapper. The pelt itself will be at the trapper anyway. You still have the bear claw, though, which should be sold to a fence in order to craft a talisman. Don’t sell any parts of legendary animals to a butcher.
Keep in mind that the Bear is a legendary animal so you need to actually track it by activating deadeye and finding the clues (dung, fur, broken branches etc.).

Also, if you want to avoid endless misery, I'd suggest turning off auto-save and using only manual saves from now on . . . save often, and especially before every robbery/fight/mission, it will keep you from getting screwed just because it auto-saved right after your horse died/you died/you did something dumb.
