American Standardbred is the same way.
Thoroughbred and Missouri Fox Trotter are MUCH better overall.
Thoroughbred I get for free because of Ultimate Edition, but they can be found in the Wild.
Missouri Fox Trotter can be hard to find.
I only grab White Arabian and fully bond with him to sell later on after the Horse Fence gets unlocked. As he sells for $360 w/ LVL4 bonding. Stables only gives $280 for it.
Black Arabian ($210 @ Stables w/ LVL4) seems to be "OK" but its stats aren't nearly as high as the White one when comparing the LVL4 stats.
It's usually not you shooting that has the horse bucking you off, it might be that you are letting the horse take on too many shots/damages and that's what's doing it.
But yes this is more likely to happen when you have not yet reached a LVL4 bond with a horse as well.
That being said, best horse I had was that black Arabian, with the white Arabian a close second. As far as I've seen, the white one is above average, not a crappy horse at all.
I'd say all horses spook easily before a level 3 bond.
Rarely got thrown off the horse after achieving a level 4 bond.
If overwhelmed in a fire fight, better to dismount and seek some cover while the horse runs away.
Your horse detects predators faster than you (well, me anyway) and you have more than enough time to prepare for the attacks. The only ones with fast, sudden attacks are the felines. Those will get you thrown down if you don't hear them coming.
However, Horse Agility, meaning their acceleration and handling, does make the quicker horses *appear* to be more skittish because they respond to threats much faster.
If you find that the responsiveness of your mount is bothersome, then pick a horse that is "less responsive" - primarily, choose a horse with slower "handling"

And all that nonsense about "best horse" is simply meta gaming where it is not needed.
Gather the Arabians, train them up a bit, and then sell them for a nice price.
Appaloosas, Paints, Mustangs, and even the Tennessee Walker from the beginning are all great horses to have and are certainly "good enough" - "better" can be fun, but doesn't matter.
Besides, the Arabians are about the size of "My Little Pony" - just add rainbows.

If you don't like the Arabian, sell it (it's worth a lot), and get another one. Stats aren't super important. I played the entire game on a mustang and was happy and did the horseman challenge just fine. If you find your horses are dying on you or have drained cores, that's a skills issue.

That doesn't even make any sense to me.
In my experience the difference between the best horse in the game and the worst horse in the game isn't that large. Just use whatever you like.
I do like the arabian though in general for good stamina. It shouldn't toss you at bonding 4 except for panther/cougar/grizzly attacks. I can fight humans just fine and have to comfort it near snakes and gators.
because some people want a horse they like the look of, and not every horse is available in the wild to break and tame yourself. Like, Turkoman for example, or the Leopard appaloosas
I prefer to LIKE the horse i use, so I'd be willing to buy store horses if it means i get a horse color i like over a ratty but free one
It's a race horse, so it is small and agile.
I prefer kinda bigger horses. Mustang for example.
From my experience all horses are easily frightened. They even fear American Black Bear which is a joke and unrealistic
What else am I gonna do with all that money? Got over $7000 now and almost nothing to spend it on.
Why chase horses when I can do something that I actually enjoy more?

Do you have the Legend of the East Satchel for Arthur? If so then make use of that. With almost every item now able to have 99 this gives you option to buy all provisions if you like so when it comes time to play as John that he won't have to really buy anything.
By Chapter 4 I had most of the items maxed out to 99, had about 20 or so of all the available items that can be cooked to eat. Various tonics... purchased every piece of clothing in the game with the exception of a couple items from Trapper I didn't yet have that early, due to needing some Legendary stuff.
All that and yea I still had $9K left in Cash and I even still have 6 Gold Bars, 10 Gold Nuggets, 10 Large Jewelry Bags, Emerald Jewel amd tons of other little stuff I could sell to the Fence. But the loose cash doesn't help John, so I leave stuff in the Satchel he can sell for cash.
