Story - first horse purchase
In story mode, one of the first missions has you leaving with Hosea, during which you buy a horse. I am perfectly happy with the one I have. Should I not be?

It doesn't force you to buy one, it just gives you and option.
It's as they mention in the game, the stables sell the best horses, stat wise. But if you enjoy the one you have all you need to do i bring it to the stable and name it. In my current playthrouh I myself am using the horse you get at the beginning. There's some timed horseman challenges that can be problematic to do with some lower stat horses, but other than that there's no problem using any horse you want.

I'd prefer getting the free white arabic horse from Ambarino.

Unless you have Ultimate Edition there is no need to ever purchase any Horse in Story Mode. Go find better horses in the wild. If you just have the starting brown horse or the replacement horse given to you cause your main horse died, any of the other horses will be better. Kentucky, Tennessee, Morgan; are the worst ones in the game.

But yea you have to at least so some of the basics in Chapter 2 before you can really get started in the Story Mode. After the game introduces you to Varmint Rifle, Bow and then after the Bear attack with Hosea; then you can get started and go explore open world and such and put the story on pause for a bit.

You can complete the entire story mode with a horse ready for the glue factory!

That being said, go find some wild ones and see which you prefer to ride.
Not that it's really needed,
But you can make some coin breaking/leveling up and selling wild horse's while you test ride

All breads with the exception of a few, can be found wild in chapter 2 (Use binoculars to ID)
One other exception to above is one found only on a quest that can be done in chapter 2, but it is technically wild also.
Couple other's that you can get in chapter 2, but these are not wild.
There's 4 Arabian's you can get in chapter 2, Three are wild and one is not - Black Arabian
"Pro tip: White Arabian"?

Whatever breed you like to ride best likely has other coat types that can only be found in chapters later than chapter 2. Several of these are also found in the wild also.
These will be a slight upgrade to the wild breed you picked in chapter 2.

Gut feeling you'll like mustangs, hard to go wrong with one..

Well also you won't know the full stats of a horse until you get it to level 4 bonding as well
